This drink is sophisticated, perfectly balanced and refreshingly simple. While an overly sweet cocktail may be enjoyable at first sip, it can quickly become overwhelming. The cucumber gimlet, however, strikes the ideal harmony between subtle sweetness and bright tartness, and it's incredibly easy to make.

Directions
Muddle the rosemary leaves and 2 cucumber slices in the bottom of a cocktail shaker. Fill with ice, then add the gin, lime juice and Simple Syrup. Shake well.
Double strain into a chilled cocktail glass (see Cook’s Note). Float a thin cucumber slice on top of the drink and serve it with a rosemary sprig, if desired.
Simple Syrup:
Yield:1 cup
Combine the sugar and water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.
Cook’s Note
To double-strain a cocktail, first strain through the strainer on the cocktail shaker, then strain through a fine-mesh strainer.
