Both cheese dip and hot dogs scream tailgate, so why not bring them together to celebrate game day in championship style? The pimento cheese wrapped in the pastry (and served on the side) is a nice surprise that makes these piggies unique.

Directions
Preheat the oven to 350 degrees F.
Place the puff pastry on a floured cutting board and bring to room temperature. Mix the egg yolks with 1 tablespoon water, and season with salt and pepper. Set aside.
Cut the puff pastry into rectangles approximately 1-by-3 inches. Place 1 teaspoon pimento cheese at one end. Top the pimento cheese with a mini sausage and roll the dough over itself to encase the sausage. Transfer to a parchment-lined baking sheet. Repeat with the remaining sausages.
Brush the pastry dough with egg wash and bake until the pastry is golden brown and delicious, 12 to 15 minutes. Serve with the remaining pimento cheese on the side for extra dipping.
Pimento Cheese:
In a bowl. gently combine the Cheddar, cream cheese, pimento, mayonnaise, garlic, paprika and cayenne until fully incorporated. Season to taste with salt and pepper. Refrigerate until using.
