Directions
Place the mezquila, pineapple juice, Simple Syrup, lime juice and ginger juice in a shaker filled with ice. Shake. Pour over crushed ice.
Piri Piri Simple Syrup:
Yield:2 cups
Bring the sugar, chiles, annatto seeds and 2 cups water to a simmer in a small saucepan, then reduce by half. Strain, then set aside to cool completely.
