Cocktails should feel like vacation. This Piri Piri Pina is a wonderful balance of brightness, sweet and spicy, perfect to pre-batch and take to the beach.

Piri Piri Simple Syrup:

Directions

  1. Place the mezquila, pineapple juice, Simple Syrup, lime juice and ginger juice in a shaker filled with ice. Shake. Pour over crushed ice.

Piri Piri Simple Syrup:

Yield: 2 cups
  1. Bring the sugar, chiles, annatto seeds and 2 cups water to a simmer in a small saucepan, then reduce by half. Strain, then set aside to cool completely.
