This is a popular street food in Japan that you’ll see being cooked on flat tops outside during festivals. It is also a classic for a quick home-cooked meal.

For the sauce: Mix together the teriyaki sauce, tomato paste, Worcestershire, soy sauce and hoisin in a bowl and set aside.
For the yakisoba: In a warm pan, add oil and render the fat down from the pork belly, 8 to 10 minutes. Add the onions, pepper and carrots and cook at high heat quickly.
Add the noodles and 2 ounces water and cook, letting the noodles break up, until the water evaporates.
Add the white part of the green onion and add the sauce at high heat. Cook until the sauce reduces, then add the green part of the green onion, stir and take off the heat.
